❆ No-Bake Chocolate Pie ❆

Okay, this pie has a long story behind it, so please brace yourselves hehe. I accidentally discovered this recipe while I was trying to make something else but I'm pretty sure something like this already exists because right after I made it, I had googled it up and found a bunch of similar recipes with different methods.
My aunt and cousins were coming over for lunch so I decided to make a no-bake mango pie for them. I usually prepare it a night before and pop it in the fridge so it can settle properly since there's no one opening the refrigerator at night and it works out perfectly.
One day, I was craving a no-bake cheesecake so I made it in the morning, hoping it would be ready by dinner but the amount of times my family opens the refrigerator door every few minutes sometimes pisses me off because it wasn't ready at all. I had to keep it overnight to let it settle, so now, I just make them at night to skip all the extra work.
Like always, I walked into the kitchen to prepare my pie after everyone fell asleep. I put my earphones on, danced around the kitchen and prepared the base for my pie. As I finished with my base and moved on to start preparing the filling, I sliced the mangoes and realized that they were completely rotten from inside.
I panicked because that was the only dessert I had planned to serve for the lunch. I was like, 'you know what, I'll just make the lemon pie again' (I had made it the last time they had visited so I wanted to try something new this time) and opened my fridge to take the lemon out, only to realize that we didn't have any of them left. I was about to give up and was like, 'I'll just buy some dessert from the store tomorrow', but then I remembered that I had some dark chocolate and cocoa powder in my pantry, so I could try to make a chocolate pie instead. If everything turns out well then it's a good thing. If not, then I'll just go with my plan of buying a dessert from outside.
Surprisingly, it tasted delicious and everyone loved it.
I had made it a couple of more times after that and it was always a hit. So when we decided to have our relatives over for a Christmas eve dinner, I decided to make this pie again.
I was super confident about it and everything was going well but as soon as I poured my melted chocolate into my whipped cream mixture, my chocolate seized and I freaked out because I didn't understand what went wrong. There were pieces of chocolate in my whipped cream and I did not have more cream to redo the filling. I decided to use a spoon and take out as much chocolate as I could.
Once I took it out, I remelted it and added it to my cream but it seized again. At this point it was already 1 AM and I was already freaking out. I was so tired, I sat down and googled some tricks to help me fix it up. They didn't work and I sat down on the chair with tears in my eyes, about to have a full ass break down.
But then I was like, 'there's no way I am giving up right now.'
My dad always says, 'don't give up' and 'try try till you succeed', so I did just that. I wiped my tears, stood up and decided to give it one last try and guess what? It worked out!
I remelted my chocolate, but this time instead of adding chocolate into the cream, I did it the other way round. I slowly added the cream to my chocolate and kept mixing it. It worked but I felt like it wasn't chocolaty enough so I took a little cream separately and mixed some cocoa powder in it and then poured it into the rest of the mixture. I usually use some chocolate shavings or chocolate chips for the decoration but this time I decided to add some of my Christmas sprinkles (affiliate link) to it to give it a christmassy touch since it was a Christmas eve party.
It looked so pretty!💖
Then came the time for everyone to taste the pie. My heart rate went all the way up. I put the pie on the table and then ran back into the kitchen like a coward. A few minutes later I heard my name being called out so I went to see that everyone was praising my pie. I honestly didn't believe them so I took a bite of it and it was actually super creamy and delicious. I think the extra cocoa powder I added later helped it become more rich and chocolaty.
Before you come at me about my methods, just know that I ain't a professional baker so I really don't know how the stuff works. I usually follow other bloggers' recipes and they turn out good. But since I made this one myself, I did whatever I knew and it always worked. I couldn't figure out my mistake so I did a little research and it just kept mentioning stuff related to temperature which I couldn't understand at all, but then I realized that I always made this pie in summers and this was the first time I made it during the winters so I came to the conclusion that it was definitely the temperature difference that messed it up.
Oh well, all's well that ends well lol. I gotta research about how the temperature and the weather affect the recipes but I am so glad it all worked out in the end and everyone ended up loving the pie💖

NO-BAKE CHOCOLATE PIE

INGREDIENTS
- 15-20 low sugar biscuits, powdered (can use Oreo if you want a chocolate base)
- 1/2 cup butter, melted
- 1 cup heavy cream
- 1/3 cup condensed milk
- 1/2 cup melted dark chocolate
- 2 tbsp cocoa powder
- Sprinkles, chocolate chips or chocolate shavings for the topping (optional)
INSTRUCTIONS
- In a bowl, add in the powdered biscuits and butter and mix. Transfer it to a springform pan and press to tighten and smoothen the crust with the back of a spoon. Freeze for 15-20 mins while you prepare your filling.
- Melt your chocolate. Keep aside. In another bowl, whip the cream until soft peaks form. Add the condensed milk and mix. Now, gently fold in the chocolate.
(Depending on how chocolatey you want the pie, you can add more chocolate or add in cocoa powder, I added a lot of cocoa powder later). - Pour the filling on top of the base and decorate it with you favourite topping. Refrigerate for 6-8 hours or overnight (Overnight works the best!)

NOTES
- The best method to melt chocolate is to cut it into small pieces, add it to a microwave safe bowl and add some small pieces of butter along with it. Make sure you take out the bowl after every 30 seconds and give it a good mix, add extra butter if required. Repeat this method until your chocolate has completely melted. You can do the same thing on the stove if you don't want to follow the double boiler method, but make sure your flame is set on low.
- You can replace the low sugar biscuits with Oreo if you prefer a chocolaty base. I just thought it would be too chocolaty for my guests so I decided to go with the low sugar biscuits. You can definitely choose any other cookie flavour of your choice.
- I haven't tried it but do you think a tablespoon or two of coffee powder would make this pie even more delicious?
- To avoid the melted chocolate from seizing, add your cream little by little to the melted chocolate, while stirring it continuously, instead of pouring the chocolate into the cream.
